Old-Fashioned Ozark Pudding

Ingredients

1/2 cup sifted all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 large eggs

1 cup light brown sugar (packed)

2 teaspoons vanilla

1 cup pecans or walnuts (chopped)

1 cup apples (finely chopped peeled)

Steps to Make It

Gather the ingredients.

Preheat the oven to 350 F.

Generously butter a 10-inch pie plate.

Sift together the flour, baking powder, and salt; set aside.

In a mixing bowl with an electric mixer, beat the eggs and sugar together until creamy. Stir in the sifted dry ingredients, blending thoroughly. Stir in the vanilla, chopped nuts, and chopped apples.

Spoon the batter into the prepared pie plate and bake in the preheated oven for 30 to 35 minutes.

Sprinkle more nuts over the top, if desired, and serve warm or cold with ice cream or sweetened whipped cream.

Recipe Variations

Use chopped fresh pears in the pudding instead of apples.

Notes

Serve with a simple brown sugar caramel sauce. In a saucepan over medium heat, combine 1 cup of brown sugar with 8 tablespoons of butter. Cook, stirring, for 1 minute. Add 1 cup of heavy cream and bring the mixture to a boil. Cook, stirring, for 2 minutes. Let the sauce cool for 10 to 15 minutes before using.
